Following are a few drink recipes from the contest:
|Spike's Party Punch|
1? oz. Malibu passion fruit rum
1? oz. Mt. Gay rum
?-oz. Bacardi 151
1 big splash pineapple juice
1 small splash fresh lime juice
Steps: Shake in a cocktail shaker and serve in a martini glass.
|Spike's Poquito|
About ? shot French peach aperitif
? shot of Square One Organic Vodka (or any vodka)
Juice of one whole lemon
Juice of ? orange
8-10 squeezes of kumquat juice
Steps: Throw what's left of the kumquats into a cocktail shaker. Add 5-6 sprigs of fresh mint. Add 1 tsp. (or to taste) superfine sugar and muddle. Add ice and shake well. Use a kumquat half to rim a martini glass, then dip in superfine sugar. Garnish with fresh mint and a kumquat on a cocktail pick.
|Ray's Strawberry|
|Kumquat Caipirinha|
4 peeled kumquats
1 large strawberry, quartered
2 cubes raw cane sugar
Juice of 1 lime
1? oz. Cacha a or white rum
? oz. Cointreau
Soda water
Steps: In a highball glass, muddle kumquats, strawberry, sugar and lime juice. Add ice. Add Cacha a or rum and Cointreau. Fill rest of the glass with soda water. Garnish with piece of raw sugar cane. (Sugar the rim if you want.)

2 cubes raw cane sugar
Dash bitters
1? oz. gin
? oz. Cointreau
Juice of ? lemon
Steps: In a cocktail shaker, muddle sugar, lemon juice and bitters. Add ice, gin and Cointreau. Shake vigorously. Strain and serve in a chilled cocktail glass. GO!
